The live taco experience
A cast-iron comal sits over open flame, a ball of masa pressed flat and dropped onto the hot surface. Your guests watch the tortilla puff and brown at the edges before the specialist Mexican cook fills it with slow-braised barbacoa, pickled onions, and a squeeze of lime. Each taco is built to order, and the service captain walks guests through the protein and salsa options so nobody stands at the station unsure of what to pick.
Masa and fillings
Corn masa is prepared fresh and portioned into small balls. Three fillings simmer in clay pots: slow-braised barbacoa, spiced chicken tinga, and smoky black bean with roasted peppers. Salsas are ground in a molcajete on-site: verde with tomatillo, roja with dried chillies, and a habanero crema.
Press and griddle
