Masa and fillings
Corn masa is prepared fresh and portioned into small balls. Three fillings simmer in clay pots: slow-braised barbacoa, spiced chicken tinga, and smoky black bean with roasted peppers. Salsas are ground in a molcajete on-site: verde with tomatillo, roja with dried chillies, and a habanero crema.
Press and griddle
Each masa ball is pressed flat in a tortilla press and dropped onto the hot comal. The tortilla puffs, develops char spots, and is flipped once. Total time from press to plate: 45 seconds. Guests watch the entire process at the counter.
Assembly
The warm tortilla is filled with the guest's protein choice, topped with pickled red onion, fresh cilantro, and a squeeze of lime. Salsa is ladled according to the guest's heat preference. For events above 60 guests, Sheffy stations two comals with separate cooks to keep the line moving without a wait.
